Einkorn Pizza Dough Recipe

Ingredients:

  • 1 cup warm water (no hotter than 115°F)

  • 2 1/4 teaspoons active dry yeast (1 packet)

  • 1 1/2 teaspoons salt

  • 2 tablespoons olive oil

  • 3 1/2 cups fresh-milled or all-purpose einkorn flour (plus up to 1/2 cup more if needed)

Instructions:

  1. Activate the Yeast - In the bowl of a stand mixer (or a large mixing bowl), combine the warm water and yeast. Let it sit for 5 minutes until foamy.

  2. Make the Dough - Add salt, olive oil, and 3 1/2 cups of einkorn flour. Using a dough hook, knead on medium speed. If the dough is too sticky and doesn't pull away from the sides, add up to 1/2 cup more flour.

  3. First Rise - Transfer the dough to a lightly oiled bowl. Cover with plastic wrap and let it rise in a warm place until doubled in size — about 2 hours.

  4. Divide & Preheat - Once risen, punch the dough down and divide it in half. Preheat your oven to 425°F with a pizza stone or cast iron skillet inside.

  5. Roll the Dough - Roll each half into a 12-inch circle on parchment paper. If you prefer a thinner, crispier crust, roll the dough out to about 14 inches instead of 12. It still holds up beautifully and gives you that perfect bite without being too thick.

  6. Assemble - Place the dough (with the parchment) onto the preheated stone or a baking sheet. Add sauce, cheese, and your favorite toppings.

  7. Bake - Bake at 425°F for 10 minutes, or until the crust is golden and the cheese is melted and bubbly.

  8. Serve - Slice and enjoy your homemade einkorn pizza!
