Carrot fries are a delicious and healthy alternative to traditional fries. Using fresh parsley from the garden adds a fresh touch that also enhances the flavor of the dish.
Roasted Carrot Fries
2 pounds carrots
3 tablespoons olive oil
1 teaspoons pink Himalayan salt
2+ tablespoons fresh, roughly chopped parsley
Instructions
Preheat oven to 400F.
Peel carrots and cut into thin strips, about 3 inches long.
Place on a parchment lined baking sheet. Drizzle carrot sticks with olive oil and sprinkle on salt, toss well to combine. Spread fries to single layer.
Bake for 30 minutes, flipping halfway through.
Remove baking sheet from oven and sprinkle with fresh parsley. Place carrots back in the oven for another 5-10 minutes or until fries are brown and slightly wrinkled.
Serve warm.
